  • 1 medium eggplant, cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 400g diced tomatoes (canned or fresh)
  • 2 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C. Toss the cubed eggplant and red bell pepper with 1 tablespoon olive oil, salt, and pepper, and roast on a baking sheet for 25–30 minutes until tender and slightly caramelized.
  2. Meanwhile, in a large pot, heat the remaining olive oil over medium heat. Sauté the chopped onion and garlic until soft, about 3 minutes.
  3. Add the diced tomatoes, vegetable broth, dried thyme, and smoked paprika to the pot. Bring to a simmer.
  4. Stir in the roasted eggplant and red bell pepper, and let the stew simmer for an additional 15 minutes, allowing the flavors to meld.
  5. Adjust seasoning with salt and pepper, then remove from heat.
