- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 garlic cloves, minced
- 1 lemon (zest and juice)
- 1 tbsp fresh thyme leaves
- 1 cup chicken stock
- 1/2 cup crème fraîche
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Rub the butterflied chicken with olive oil, salt, pepper, minced garlic, lemon zest, and thyme.
- Place the chicken on a baking tray and roast for 45–50 minutes until the skin is golden and the meat is cooked through. Baste periodically with the pan juices.
- Meanwhile, in a small saucepan, combine the chicken stock and crème fraîche. Bring to a gentle simmer and stir in the lemon juice. Adjust seasoning with salt and pepper.
