Ingredients:

  • 1 whole chicken (about 1.5kg), butterflied
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 garlic cloves, minced
  • 1 lemon (zest and juice)
  • 1 tbsp fresh thyme leaves
  • 1 cup chicken stock
  • 1/2 cup crème fraîche
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C. Rub the butterflied chicken with olive oil, salt, pepper, minced garlic, lemon zest, and thyme.
  2. Place the chicken on a baking tray and roast for 45–50 minutes until the skin is golden and the meat is cooked through. Baste periodically with the pan juices.
  3. Meanwhile, in a small saucepan, combine the chicken stock and crème fraîche. Bring to a gentle simmer and stir in the lemon juice. Adjust seasoning with salt and pepper.
  4. Once the chicken is done, let it rest for 5 minutes before slicing. Drizzle the lemon-herb butter sauce over the carved chicken and garnish with fresh parsley.
