  2. Meanwhile, in a medium saucepan, combine the rinsed lentils with water and a pinch of salt. Bring to a simmer and cook for 20–25 minutes until tender but not mushy. Drain and set aside.
  3. In a large bowl, whisk together the lemon juice, Dijon mustard, the remaining olive oil, and chopped parsley. Season with salt and pepper.
  4. Add the roasted beets, cooked lentils, sliced red onion, and minced garlic to the bowl. Toss gently to combine, ensuring the vinaigrette evenly coats all ingredients.
