Ingredients:

  • 1 cup green lentils, rinsed
  • 200g mixed wild mushrooms, roughly sliced
  • 2 medium carrots, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 celery stalk, diced
  • 400g diced tomatoes (canned or fresh)
  • 2 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C. Toss the diced carrots with 1 tbsp olive oil, salt, and pepper, and roast on a baking sheet for about 25 minutes until tender and slightly caramelized.
  2. Meanwhile, in a large pot, heat the remaining olive oil over medium heat. Sauté the chopped onion and garlic until softened, about 3 minutes.
  3. Add the diced celery, roasted carrots, mushrooms, diced tomatoes, vegetable broth, dried thyme, and bay leaf. Bring to a gentle simmer and cook for 15–20 minutes until the lentils are tender and the flavors meld together.
  4. Remove the bay leaf and adjust seasoning with salt and pepper. Stir in freshly chopped parsley just before serving.
