- 1 large onion, diced
- 2 carrots, sliced
- 2 garlic cloves, minced
- 1 cup vegan red wine (or use a similar light-bodied Burgundy Pinot Noir)
- 1 cup vegetable broth
- 2 tbsp tomato paste
- 1 tbsp soy sauce or tamari
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 2 minutes.
- Add the sliced carrots and mushrooms, and cook until the mushrooms release their moisture, about 5 minutes.
- Stir in the tomato paste, dried thyme, and bay leaf. Cook for 1 minute to combine the flavours.
- Pour in the vegan red wine and vegetable broth. Bring the mixture to a simmer and let it reduce for about 20 minutes, until the sauce thickens slightly.
- Season with salt and pepper to taste. Remove the bay leaf.
- Garnish with freshly chopped parsley and serve warm with crusty bread or over mashed potatoes.
