Mushroom Bourguignon (Vegan)

Ingredients:

  • 500g mixed mushrooms (such as cremini, portobello, and shiitake), cleaned and sliced
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1 cup vegan red wine (or use a similar light-bodied Burgundy Pinot Noir)
  • 1 cup vegetable broth
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce or tamari
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 2 minutes.
  2. Add the sliced carrots and mushrooms, and cook until the mushrooms release their moisture, about 5 minutes.
  3. Stir in the tomato paste, dried thyme, and bay leaf. Cook for 1 minute to combine the flavours.
  4. Pour in the vegan red wine and vegetable broth. Bring the mixture to a simmer and let it reduce for about 20 minutes, until the sauce thickens slightly.
  5. Season with salt and pepper to taste. Remove the bay leaf.
  6. Garnish with freshly chopped parsley and serve warm with crusty bread or over mashed potatoes.
