Instructions:
- Preheat your oven to 200°C. Toss the cubed beets with 1 tablespoon of olive oil, salt, and pepper; spread them on a baking sheet and roast for 25–30 minutes until tender and slightly caramelized.
- Meanwhile, cook the lentils in a pot of boiling water with a pinch of salt for about 20–25 minutes until tender but not mushy. Drain and set aside.
- In a large bowl, whisk together the lemon juice, Dijon mustard, the remaining olive oil, and chopped parsley. Season with salt and pepper.
