  • 3 tbsp olive oil, divided
  • Juice of 1 lemon
  • 1 tsp Dijon mustard

  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 200°C. Toss the cubed beets with 1 tablespoon of olive oil, salt, and pepper; spread them on a baking sheet and roast for 25–30 minutes until tender and slightly caramelized.
  2. Meanwhile, cook the lentils in a pot of boiling water with a pinch of salt for about 20–25 minutes until tender but not mushy. Drain and set aside.
  3. In a large bowl, whisk together the lemon juice, Dijon mustard, the remaining olive oil, and chopped parsley. Season with salt and pepper.
  4. Add the roasted beets, cooked lentils, sliced red onion, and minced garlic to the bowl. Toss gently to combine, ensuring the dressing coats all ingredients evenly.
