- 1 sheet puff pastry, thawed
- 400g mixed wild mushrooms, cleaned and sliced
- 1 small shallot, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 100g goat cheese, crumbled
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Roll out the puff pastry on a lightly floured surface and transfer it to a baking sheet lined with parchment paper.
- In a large pan, heat the olive oil over medium heat. Add the chopped shallot and garlic, and sauté until softened, about 2 minutes.
- Add the mixed mushrooms and thyme to the pan. Cook for 8–10 minutes until the mushrooms are tender and have released their moisture. Season with salt and pepper.
- Spread the cooked mushrooms evenly over the puff pastry, leaving a 1-cm border along the edges.
