Recipe

Huîtres au Mignonette (Oysters with Mignonette)

Ingredients

  • 12 fresh oysters
  • 1 shallot, finely chopped
  • 60 ml red wine vinegar
  • Freshly ground black pepper
  • A pinch of salt
  • 1 lemon, cut into wedges
  • Crushed ice (for serving)

Instructions

  1. Shuck the oysters carefully, ensuring the natural liquor is retained. Arrange the oysters on a serving tray bedded with crushed ice.
  2. In a small bowl, combine the finely chopped shallot, red wine vinegar, salt, and a generous pinch of freshly ground black pepper to create the mignonette sauce.
  3. Just before serving, either drizzle a small amount of the sauce over each oyster or serve it on the side so guests can add as desired.
  4. Garnish with a wedge of lemon and serve immediately, letting the oysters' brininess complement the tang of the mignonette.

Enjoy this refined dish alongside your Domaine William Fèvre Petit Chablis for a truly memorable dining experience.
