Risotto al Limone e Erbe (Lemon and Herb Risotto)
This creamy risotto with bright lemon and fresh herbs is a perfect match for the vibrant acidity and minerality of Graci Etna Bianco.
Ingredients:
- 300g Arborio rice
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1/2 cup dry white wine
- 1L chicken or vegetable stock, kept warm
- Juice and zest of 1 lemon
- 50g Parmesan cheese, grated
- 2 tbsp butter
- 2 tbsp fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Sauté Aromatics: Heat olive oil in a large saucepan over medium heat. Sauté the onion and garlic until softened.
- Toast the Rice: Add the Arborio rice and stir for 2 minutes until lightly toasted.
- Add Wine: Pour in the white wine and cook until absorbed.
- Cook the Risotto: Add the warm stock, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. Continue for about 18-20 minutes, until the rice is tender but still al dente.
- Add Lemon and Cheese: Stir in the lemon juice, zest, Parmesan cheese, and butter. Season with salt and pepper to taste.
- Finish with Herbs: Sprinkle with fresh parsley, toss gently, and serve immediately.
