Mushroom Lasagna
Ingredients:
- 250g lasagna sheets
- 200g mushrooms, sliced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 cups tomato passata
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese, grated
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 180°C. In a pan, sauté mushrooms, onion, and garlic in olive oil until softened.
- Stir in tomato passata, season with salt and pepper, and simmer for 10 minutes.
- In a baking dish, layer lasagna sheets, mushroom sauce, and ricotta. Repeat until all ingredients are used.
- Top with Parmesan and bake for 25-30 minutes until golden and bubbly.
- Serve warm, garnished with fresh parsley.
