Recipe

Seafood Pasta

Ingredients:

  • 400g spaghetti
  • 500g mixed seafood (prawns, scallops, calamari)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup dry white wine
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

  1. Cook spaghetti according to package instructions. Reserve 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet. Sauté garlic until fragrant, then add cherry tomatoes and cook for 2 minutes.
  3. Add seafood and cook until just done. Deglaze with white wine and simmer briefly.
  4. Toss cooked spaghetti with the seafood mixture. Add reserved pasta water if needed to adjust the consistency.
  5. Season with salt, pepper, and parsley before serving.

Tip: Serve with a side of crusty bread and a drizzle of olive oil.
