Seafood Pasta
Ingredients:
- 400g spaghetti
- 500g mixed seafood (prawns, scallops, calamari)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup dry white wine
- 1 tbsp fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Cook spaghetti according to package instructions. Reserve 1/2 cup of pasta water.
- Heat olive oil in a large skillet. Sauté garlic until fragrant, then add cherry tomatoes and cook for 2 minutes.
- Add seafood and cook until just done. Deglaze with white wine and simmer briefly.
- Toss cooked spaghetti with the seafood mixture. Add reserved pasta water if needed to adjust the consistency.
- Season with salt, pepper, and parsley before serving.
Tip: Serve with a side of crusty bread and a drizzle of olive oil.
