Recipe

Spinach and Goat Cheese Tart

Ingredients:

  • 1 sheet puff pastry
  • 200g fresh spinach, chopped
  • 150g goat cheese, crumbled
  • 2 eggs
  • 1/2 cup cream
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 180°C. Line a tart pan with puff pastry and prick the base with a fork.
  2. Heat olive oil in a pan. Sauté spinach until wilted. Allow to cool slightly.
  3. In a bowl, whisk eggs and cream. Season with salt and pepper.
  4. Layer spinach and goat cheese in the tart shell. Pour over the egg mixture.
  5. Bake for 25-30 minutes until golden and set. Serve warm.

Tip: Garnish with fresh thyme for added aroma.
