Recipe

Seafood Linguine

Ingredients:

  • 400g linguine
  • 500g mixed seafood (prawns, scallops, calamari)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

  1. Cook linguine according to package instructions. Reserve 1/2 cup of pasta water.
  2. Heat olive oil in a large pan. Sauté garlic until fragrant.
  3. Add mixed seafood and cook until just done. Deglaze with white wine.
  4. Toss in cherry tomatoes and reserved pasta water. Simmer for 2-3 minutes.
  5. Mix in cooked linguine and parsley. Season with salt and pepper.
  6. Serve immediately with a glass of Poggio Anima 'Gabriel' Pecorino.

Tip: Garnish with a squeeze of lemon for added zest.
