Taboulé Provençal (Herbed Couscous Salad)
Ingredients:
- 200g couscous
- 200mL hot water or vegetable broth
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red capsicum, chopped
- 1 small red onion, finely chopped
- Fresh parsley and mint, chopped
- Juice of 1 lemon
- 3 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Place couscous in a bowl and cover with hot water or broth. Cover and let sit for 5 minutes, then fluff with a fork.
- Add chopped vegetables, herbs, lemon juice, olive oil, salt, and pepper. Mix well.
- Chill for 1 hour before serving.
- Serve with grilled halloumi or seafood and a chilled glass of Rimauresq Rebel Rosé.
