Wild Mushroom Risotto
Ingredients:
- 1 1/2 cups Arborio rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 cups mixed mushrooms, sliced
- 1/2 cup dry white wine
- 4 cups vegetable stock
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pan. Sauté onion and garlic until soft.
- Add mushrooms and cook until browned. Stir in Arborio rice and cook for 1-2 minutes.
- Deglaze with white wine and gradually add vegetable stock, stirring continuously.
- Once rice is creamy and al dente, stir in Parmesan cheese and season with salt and pepper.
