Diots aux Pommes (Savoyard Sausages with Apples)

Ingredients:

  • 4 diots (traditional Savoie sausages)
  • 2 apples, peeled, cored, and cut into wedges
  • 1 large onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup dry red wine
  • 1/2 cup water or light chicken broth
  • A few sprigs of fresh thyme
  • Salt and pepper, to taste
  • Optional: 1 tsp Dijon mustard for extra tang

Instructions:

  1. Sear the Sausages: In a large skillet, heat the olive oil and butter over medium heat. Add the diots and brown them on all sides, about 6–8 minutes. Remove the sausages and set aside.
  2. Sauté the Aromatics: In the same skillet, add the sliced onion and apple wedges. Sauté until the onions become soft and the apples start to caramelise, approximately 5 minutes.
  3. Combine and Simmer: Return the sausages to the pan. Pour in the red wine and water (or broth), add the thyme sprigs, and stir in the Dijon mustard if using. Bring the mixture to a gentle simmer.
  4. Cook Through: Cover the skillet and cook for 15–20 minutes, until the sausages are cooked through and the flavors have melded. Adjust seasoning with salt and pepper.
  5. Plate: Arrange the sausages on a serving dish and spoon the apple and onion mixture over the top.
