Animus Distillery Bauble Ananas Gin 50ml is a 50ml bauble of the distillery's pineapple gin.

Pineapple is notoriously hard to capture in a still, which is presumably why Sarah Wallace and Luke Jacques kept pushing until nearly three-quarters of the botanical load was pineapple. Fresh ginger, turmeric and galangal cut the fruit's sweet acidity, while lemongrass, lemon verbena and makrut lime, picked and prepared the day of production, add lift, and ground sesame seed gives the spirit its oily mouthfeel. The gin then went back onto pineapple flesh and rind in a single 400-litre vat for eight months, until distillate and fruit infusion sat in balance. The bauble is a sealed glass ornament holding a single pour.

One bauble is one generous drink. Pineapple arrives first, then ginger and lime-leaf warmth. Pour it over ice with elderflower tonic and a wedge of fresh fruit, or use the lot in a short tiki-style sour with lime and a dash of bitters.
