Risotto al Tartufo Bianco (White Truffle Risotto)

    Ingredients:

    • 1 ½ cups Arborio rice
    • 1 small shallot, finely chopped
    • 3 tbsp unsalted butter
    • 4 cups vegetable or chicken stock, kept warm
    • ½ cup dry white wine (preferably Timorasso DOC)
    • 1 ½ tbsp white truffle oil
    • ½ cup grated Parmigiano Reggiano
    • Salt and pepper, to taste
    • Fresh white truffle, for shaving (optional)

    Instructions:

    1. In a pan, melt 1 tbsp of butter over medium heat and sauté the shallot until translucent.
    2. Add the Arborio rice and toast for 1-2 minutes, stirring frequently.
    3. Pour in the white wine and stir until fully absorbed.
    4. Add warm stock, one ladle at a time, stirring continuously and allowing each addition to absorb before adding the next.
    5. Continue this process until the rice is creamy and cooked al dente, about 18 minutes.
    6. Remove from heat and stir in the remaining butter, truffle oil, and Parmigiano Reggiano.
    7. Season with salt and pepper to taste.
    8. Shave fresh white truffle over the top before serving (if available).

Tip: For an extra layer of richness, add a splash of Timorasso wine just before serving.
