Risotto al Tartufo Bianco (White Truffle Risotto)
Ingredients:
- 1 ½ cups Arborio rice
- 1 small shallot, finely chopped
- 3 tbsp unsalted butter
- 4 cups vegetable or chicken stock, kept warm
- ½ cup dry white wine (preferably Timorasso DOC)
- 1 ½ tbsp white truffle oil
- ½ cup grated Parmigiano Reggiano
- Salt and pepper, to taste
- Fresh white truffle, for shaving (optional)
Instructions:
- In a pan, melt 1 tbsp of butter over medium heat and sauté the shallot until translucent.
- Add the Arborio rice and toast for 1-2 minutes, stirring frequently.
- Pour in the white wine and stir until fully absorbed.
- Add warm stock, one ladle at a time, stirring continuously and allowing each addition to absorb before adding the next.
- Continue this process until the rice is creamy and cooked al dente, about 18 minutes.
- Remove from heat and stir in the remaining butter, truffle oil, and Parmigiano Reggiano.
- Season with salt and pepper to taste.
- Shave fresh white truffle over the top before serving (if available).
Tip: For an extra layer of richness, add a splash of Timorasso wine just before serving.
