Apollonio 1870 Mani Del Sud Primitivo Di Manduria is a bold and expressive red wine from Puglia, Italy. Made from 100% Primitivo, it offers intense aromas of ripe blackberries, plums, and dried figs, with layers of spice, cocoa, and vanilla. The palate is full-bodied and velvety, with well-rounded tannins and a long, warming finish.

Recipe

Roasted Root Vegetables

Ingredients:

  • 4 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 2 sweet potatoes, chopped
  • 2 tbsp olive oil
  • 1 tsp rosemary, chopped
  • 1 tsp thyme, chopped
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 200°C. Line a baking tray with parchment paper.
  2. In a large bowl, toss the vegetables with olive oil, rosemary, thyme, salt, and pepper.
  3. Spread the vegetables evenly on the prepared tray.
  4. Roast for 35–40 minutes, stirring halfway through, until tender and golden.
  5. Serve warm as a side dish or enjoy on its own with a glass of Primitivo.

Tip: Add a drizzle of balsamic glaze for extra sweetness.
