Ingredients:
- 4 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 2 sweet potatoes, chopped
- 2 tbsp olive oil
- 1 tsp rosemary, chopped
- 1 tsp thyme, chopped
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 200°C. Line a baking tray with parchment paper.
- In a large bowl, toss the vegetables with olive oil, rosemary, thyme, salt, and pepper.
- Spread the vegetables evenly on the prepared tray.
- Roast for 35–40 minutes, stirring halfway through, until tender and golden.
