Bombette di Maiale (Serves 4)
Bombette di Maiale are small pork rolls stuffed with cheese and herbs, popular in Apulia. These tender, flavourful bites are perfect for grilling.
Ingredients:
- 500g thin pork slices (like pork shoulder or loin)
- 150g provolone cheese, cut into small cubes
- Fresh parsley, chopped
- Salt and black pepper, to taste
- Olive oil, for brushing
Instructions:
- Stuff the Pork: Lay out each pork slice, season with salt and pepper, add a few pieces of provolone, and sprinkle with parsley. Roll up and secure with a toothpick.
- Grill: Brush with olive oil and grill over medium-high heat until cooked through and lightly charred, about 10–12 minutes.
- Serve: Remove toothpicks and serve hot.
