Insalata di Finocchi e Arance (Fennel and Orange Salad)

Ingredients:

  • 1 large fennel bulb, thinly sliced
  • 2 oranges, peeled and segmented
  • ¼ red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh mint
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine the fennel, orange segments, and red onion.
  2. Drizzle with olive oil and lemon juice, then toss gently to coat.
  3. Season with salt and pepper, and sprinkle with fresh mint.
  4. Let sit for 10 minutes before serving to allow the flavours to meld.

Tip: Add toasted almonds or shaved Pecorino for extra texture and flavour.
