Bannockburn Chardonnay 2022

Bannockburn Chardonnay is a refined, lees-worked Chardonnay from the Moorabool Valley.

The method has barely changed in decades: whole bunches to the press, juice settled overnight, wild ferment in a mix of 500-litre French oak hogsheads and puncheons with a fifth new, and ten months on lees without a single stir. Seventy per cent completed malolactic. Behind that consistency are organically farmed sites, Olive Tree Hill from 1976 beside the S.R.H. parcel, the Winery Block from 1981, Kelly Lane's Clone 76 and a small slice of Stuart's Block, all on volcanic soils over limestone clays. The valley is cool, windy and low in rainfall, which is why these wines finish salty and dry.

An exceptional release, striking a balance between fruit weight, tensile acidity and supple texture. Stone fruit meets richer, nuttier characters, with crystalline freshness, tangy grip and a complex finish. Serve at 11 to 12 degrees with roast chicken, a bowl of mussels, or pork loin and apple.
