Bannockburn S.R.H. Chardonnay 2021

Bannockburn S.R.H. Chardonnay is a single-vineyard Chardonnay from 45-year-old vines in Geelong.

Twelve rows of clone P58, over 45 years old and yielding very little, supply the whole wine. Their roots are well into the ancient marine sediment that forms the bedrock here, and they seem to draw the minerality straight out of it, giving a saline spine that carries the flavour and texture this label is known for. The 2021 was whole-bunch pressed to tank, then wild-fermented in Tronçais oak hogsheads with 30 per cent new, and left ten months on lees without stirring, with malolactic conversion running through 70 per cent of the blend.

Tightly drawn and long, with grapefruit, lemon curd, white peach, a struck-match edge and a saline finish. Serve at 12 to 13 degrees, decanted while it is young. Roast chicken, crayfish, or a well-aged cheddar are all good company.
