Bannockburn Sauvignon Blanc 2025

Bannockburn Sauvignon Blanc is a restrained, site-driven Sauvignon Blanc from certified organic vines in Geelong.

Old oak has come back into the ageing, adding texture and a broader set of aromas without pushing the fruit around. The rest of the approach stays where Matt Holmes moved it in 2021, with cellar work pared back so that old vines and limestone soils set the character. Two small certified organic parcels, planted in 1996 at the eastern edge of the property next to the Serré Pinot Noir vines, provide all the fruit. The Moorabool Valley is cool and dry, which keeps this variety well clear of the tropical register it reaches further north.

Savoury and tightly focused, with hay, blackcurrant leaf and Comice pear, speaking more of place than of variety. Serve at 10 to 12 degrees alongside food. Grilled fish, chicken with tarragon, or a plate of oysters.
