Recipe

Mushroom Risotto

Ingredients:

  • 1 cup Arborio rice
  • 500g mixed mushrooms, sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken or vegetable stock
  • 1/2 cup dry red wine
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large pan. Sauté onions and garlic until soft.
  2. Add mushrooms and cook until tender.
  3. Stir in rice and cook for 1-2 minutes. Add red wine and let it absorb.
  4. Gradually add stock, one ladle at a time, stirring continuously until rice is cooked.
  5. Mix in Parmesan cheese, season with salt and pepper, and serve warm.
