Mushroom Risotto
Ingredients:
- 1 cup Arborio rice
- 500g mixed mushrooms, sliced
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups chicken or vegetable stock

- 2 tbsp olive oil
