Recipe

Coniglio in Porchetta (Rabbit with Fennel and Herbs)

Ingredients:

  • 1 rabbit, cut into pieces
  • 2 cloves garlic, minced
  • 1 tbsp fennel seeds
  • 2 sprigs rosemary
  • Fresh sage leaves
  • 100mL dry white wine
  • Salt, pepper, and olive oil

Instructions:

  1. Season rabbit with salt, pepper, fennel seeds, and herbs. Let marinate for 1 hour.
  2. In a large pan, heat olive oil and brown the rabbit pieces.
  3. Add garlic and cook until fragrant. Pour in wine and cover.
  4. Simmer gently for 45–60 minutes until rabbit is tender.
  5. Serve with roasted potatoes and a glass of Bisci Verdicchio di Matelica.
