Vongole alla Marchigiana (Clams in White Wine)
Ingredients:
- 500g fresh clams, cleaned
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup dry white wine (preferably Verdicchio di Matelica)
- 1 tbsp fresh parsley, chopped
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- Crusty bread, for serving
Instructions:
- Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant.
- Add the clams and pour in the white wine.
- Cover and cook for 5-7 minutes, or until the clams have opened.
- Remove from heat and sprinkle with fresh parsley and red pepper flakes.
- Season with salt and black pepper to taste.
- Serve immediately with crusty bread to soak up the delicious broth.
Tip: For extra flavour, finish with a squeeze of fresh lemon juice just before serving.
