Recipe

Vongole alla Marchigiana (Clams in White Wine)

Ingredients:

  • 500g fresh clams, cleaned
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (preferably Verdicchio di Matelica)
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Crusty bread, for serving

Instructions:

  1. Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant.
  2. Add the clams and pour in the white wine.
  3. Cover and cook for 5-7 minutes, or until the clams have opened.
  4. Remove from heat and sprinkle with fresh parsley and red pepper flakes.
  5. Season with salt and black pepper to taste.
  6. Serve immediately with crusty bread to soak up the delicious broth.

Tip: For extra flavour, finish with a squeeze of fresh lemon juice just before serving.
