Blind Corner Crémant 2022

Blind Corner Crémant is a hand-disgorged sparkling Chenin Blanc from Margaret River.

Certified organic and biodynamic, the Quindalup vineyard supplies a single block of Chenin Blanc for this, picked by hand and pressed as whole bunches straight to barrel. Fermentation is stopped short: the wine goes to bottle with 20 to 24 grams of residual sugar still in it and finishes dry in there, which is the old rural method, not the Champagne one. Eighteen months on lees follow, then riddling and disgorgement by hand at the winery. Everything happens on site, which is how the Goulds prefer it, since they do their own pruning, picking, pressing and bottling.

Dry and brisk, with green apple, lemon and a bready lees character from the long ageing. Serve properly cold, 6 to 8 degrees. It is a poolside bottle first and foremost, though it handles oysters and fried food well.
