Blind Corner Pétillant 2024

Blind Corner Pétillant is a pale pink sparkling wine made from Chenin Blanc with a splash of Shiraz.

Made with nothing added at any stage, this is about as unadorned as sparkling wine gets. Chenin Blanc accounts for 99 per cent of the blend and Shiraz the remaining one per cent, which is enough to tint it. The fruit was pressed to a combination of barriques and tank, and the batches were brought together before fermentation had finished, dosed with a little juice and bottled to complete the ferment there. Over the following day the team riddled, disgorged and resealed every bottle by hand, clearing out most of the spent yeast. The Margaret River vineyards behind it are farmed organically and biodynamically.

Generous and juicy, with strawberry, apple and a soft gentle fizz, closing dry. Serve at 7 degrees straight from the fridge, in a tumbler if you like. Made for warm afternoons, cured meats, salty snacks, or anything fried.
