Blind Corner Quindalup Petillant 2022

Blind Corner Quindalup Petillant is a lightly sparkling pink wine made from Chenin Blanc with a dash of Shiraz.

No additions at all go into this: not acid, not sugar, not sulphur. Chenin Blanc pressings from the Goulds' biodynamic Quindalup vineyard fermented naturally in barrel with a frozen bucket of Shiraz juice thrown in, and once the wine was nearly dry a little more Shiraz juice was added, the barrels were blended, and the ferment was finished in bottle. That last step traps the carbon dioxide and gives the soft foaming pressure. Everything from picking to bottling happens in-house at Margaret River.

Generous, with ripe strawberry, apple skin and a soft sparkle that fades gently as the bottle empties. Serve cold, at 7 degrees. Pour it at a barbecue, alongside fried chicken, or with a bowl of summer berries and cream.
