Blind Corner Wilyabrup Bernard 2019

Blind Corner Wilyabrup Bernard is a single-block Margaret River Cabernet Sauvignon built on appassimento.

Appassimento, drying the picked bunches before they are fermented, is the technique behind Amarone, and almost nobody in Australia uses it on Cabernet Sauvignon. Water evaporates, sugar and flavour concentrate, and the resulting wine carries more depth and a longer, softer tannin line than the same fruit would give fresh. The block sits at Wilyabrup on the coastal side of Margaret River, certified organic and biodynamic since 2016. Gould picks by hand, dries the bunches, then foot-crushes and hand-plunges through a wild ferment before basket-pressing to mature French oak for a year. No fining, and very little else.

Powerful and savoury, with dried black cherry, liquorice, cocoa and a warm, drawn-out finish. Decant an hour ahead and serve at 18 degrees in a large glass. Pairs with braised short rib, game, or a wedge of aged Gouda.
