Chuletas de Cordero a la Riojana (Rioja-Style Grilled Lamb Chops)
Ingredients:
- 4 lamb chops
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- Salt and pepper, to taste
- 1 tbsp red wine vinegar
- 1 tbsp honey (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a small bowl, mix the olive oil, garlic, rosemary, thyme, salt, pepper, red wine vinegar, and honey (if using).
- Rub the mixture onto the lamb chops and let them marinate for at least 30 minutes.
- Preheat your grill to medium-high heat. Grill the lamb chops for 4–5 minutes per side for medium-rare (adjust cooking time for your preferred doneness).
- Remove from the grill and let rest for a few minutes before serving.
