Cordero a la Riojana (Riojan-Style Roast Lamb)
Ingredients:
- 1.5 kg leg of lamb
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- 1/2 cup red wine
- 1/2 cup vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 180°C (350°F). Rub the lamb with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the lamb in a roasting pan and pour the red wine and vegetable broth around it.
- Roast for about 1.5 hours, basting occasionally with the pan juices, until the lamb is cooked to your preferred level of doneness.
- Once the lamb is done, remove it from the oven and let it rest for 10 minutes. Garnish with fresh parsley before serving.
