Bondar Adelaide Hills Chardonnay 2020

Bondar Adelaide Hills Chardonnay is a single-vineyard Chardonnay from high ground at Echunga.

Rathmine, the source, sits at 450 metres above sea level in the Adelaide Hills on stony, shallow clay loam over limestone, thirty years old and about as good a footing for Chardonnay as South Australia offers. Andre Bondar and Selina Kelly pick all their fruit by hand in the cool of early morning, press it whole-bunch, and let it ferment on wild yeasts in French oak, roughly a quarter of it new, plus a pair of ceramic eggs. Some parcels were allowed to complete malolactic conversion until the acid sat where they wanted it. The lees were left unstirred to keep the fruit clear.

Fine and pure, with white peach, grapefruit and a nutty lees edge, finishing dry and long. Serve at 11 to 12 degrees. Grilled prawns, roast chicken, or a creamy potato gratin; it will also hold its own against smoked trout.
