Description
Bondar Fiano is a textural, dry white from grafted vines in McLaren Vale.
The vines belong to Ben Lacey in Whites Valley, and they are unusual: eight-year-old Fiano grafted onto twenty-five-year-old Chardonnay rootstocks, growing in shallow, dark Biscay clay over limestone. Fiano suits McLaren Vale better than most white varieties, with thick skins, high natural acidity and no fear of heat. The 2021 was picked at the end of February and left on skins for just sixteen hours, enough to draw a little texture, then pressed gently as whole bunches into old oak and stainless steel. Fermentation was natural, and the wine sat on lees without sulphur until June, settled and blended in September.
Straw-coloured, with golden delicious apple and crunchy pear, fragrant and juicy, closing with sappy freshness. Serve at 10 degrees. Grilled calamari, a chicken and rocket salad, or prosciutto with melon on a warm evening are all good company.
