Bondar Fiano 2022

Bondar Fiano is a small-batch McLaren Vale white with chalky texture and bright acid.

Ben Lacey's Seaview block supplies the fruit: Fiano approaching ten years old, grafted onto Chardonnay rootstocks a quarter of a century old, in shallow dark Biscay clay over limestone. Picking happened at the end of February, with sixteen hours on skins before a light whole-bunch pressing into old oak and stainless steel. The ferment ran on wild yeasts, and the wine stayed on lees unsulphured until June, which is where the texture comes from. It was blended into a single small release, the sort of quantity that disappears quickly.

Fleshy apple and white blossom on the nose with a chalky edge, then bright flavour, pulpy texture, live-wire acid and a gentle grip. Serve at 10 degrees. Built for warm nights and smoky barbecued fish.
