Bondar Fiano 2023

Bondar Fiano is a McLaren Vale white drawn from three sites in a cool, low-yielding year.

Three cool vintages in a row cut yields across McLaren Vale, and in 2023 Andre and Selina had to cast wider than their usual Lacey vineyard, adding two sites in Whites Valley in the south of the region. The ground there is rocky clay with enough marine influence to hold temperatures down, and the Fiano grown on it has thick skins and plenty of natural acidity. All three parcels came off in the second week of March, a fortnight later than normal. After a short spell on skins the fruit was pressed gently to old oak and stainless steel, then left on light lees until June before blending.

Long hang time has given a bright, fresh white with real texture: lemon, green pear and a saline, pithy close. Serve at 10 degrees. Fish off the barbecue, a prawn salad, or salt and pepper squid.
