Description
Bondar Fiano is a dry McLaren Vale white blended from two contrasting Ben Lacey blocks.
Two vineyards, both run by Ben Lacey, do the work. Branson Road at Tatachilla sits close enough to the sea to stay relatively cool through summer, on grey-brown loam over limestone, and the thick-skinned fruit off it holds acid firmly. Olivers Road faces north, runs hotter, and grows on rich red loam over limestone, which brings flesh. After the very late 2023 vintage, picking returned to something like normal, the parcels coming in through the last week of February and the first week of March, and yields recovered. A short time on skins, slow gentle pressing to old oak and stainless steel, light lees until June.
Fresh and finely textured, with citrus, almond skin and green apple, and a dry mineral finish. Serve at 10 degrees. Smoky barbecued fish, grilled zucchini, or a bowl of clams; it also does well with a simple risotto.
