Bondar Hope Springs Eternal Clarendon Shiraz 2023

Bondar Hope Springs Eternal Clarendon Shiraz is a Shiraz from the historic Hickinbotham vineyard at Clarendon.

First planted in 1971, high and dry-grown on rocky, ironstone-rich red soil and biodynamically farmed, the Hickinbotham vineyard has fed Grange, Eileen Hardy and Clarendon Hills over the decades. At 250 metres and well inland of the Rayner Vineyard, it gives a finer, more ferrous Shiraz with coiled power, in Andre Bondar's words. He played the first release safe, with minimal whole bunches and a lick of new oak. Knowing what the fruit can do, he has pushed further here: around 65 per cent whole bunches and fourteen months in seasoned French hogsheads, which layers savoury spice over the vineyard's natural intensity.

Potent and aromatic, with red and black fruit, cracked pepper, iron and a long spicy finish that keeps building. Decant an hour ahead and serve at 17 degrees. Slow-cooked beef, venison, or grilled lamb cutlets.
