Bondar Midnight Hour Shiraz 2021

Bondar Midnight Hour Shiraz is a whole-bunch Shiraz from two old blocks in the estate's Rayner Vineyard.

The blocks were planted in 1960 and 1990 on the Seaview side of Rayner, in red-brown clay over limestone, farmed organically and without irrigation where the season allows. That combination of old vines and low-vigour soil gives small, open canopies, so sunlight reaches the fruit all season and the stems lignify properly, which matters because the stems go into the ferment. 2021 gave a wet spring, strong growth and warm flowering with good set, then mild January and February conditions that stretched ripening out. Andre Bondar reckons it could be one of the better vintages of the last decade.

Dark-fruited and spicy, with bramble, black pepper and a whole-bunch lift, the tannin ripe and the finish long. Decant and serve at 17 degrees. Roast lamb, beef ribs, or a pepper-crusted steak; there is plenty of life left in it.
