Bondar Rosé 2021

Bondar Rosé is a pale, dry McLaren Vale rosé made entirely from Grenache.

Three parcels make it up: thirty per cent from the estate's own Rayner vineyard and the rest from two sandy sites at McLaren Flat, all grown with organic practices and minimal chemical input. Each was vinified separately and blended late. The Rayner fruit fermented warm in old oak to build mouthfeel and pull out savoury flavour; the remainder fermented cool with some solids in stainless steel to hold brightness and fruit purity. That split is the whole trick to a rosé with something behind the freshness, and it is why this drinks with more presence than its pale colour suggests.

Fleshy red fruit, a savoury edge, and clean dry length. Serve at 8 to 10 degrees — too cold and you lose the texture. Grilled prawns, a salad of tomato and stone fruit, or a roast chicken eaten outdoors.
