Bondar Rosé 2022

Bondar Rosé is a dry Grenache and Cinsault rosé from McLaren Vale.

The blend runs 85 per cent Grenache and 15 per cent Cinsault, sourced from the sands of the Rayner vineyard and a south-facing Blewitt Springs site planted in the mid-1990s on deep sand. Grenache from Rayner fermented in old barrels to add texture and complexity; the grower Grenache and the Rayner Cinsault fermented cooler with some solids in tank to keep the fruit bright. Cinsault earns its place in a blend like this — it brings perfume and a light frame without adding weight, which is exactly what southern French rosé does well and what Andre Bondar is aiming at.

Red fruit and florals lead, then a turn of wild herb that reads as distinctly Mediterranean. A savoury note runs under the summer fruit, and the finish is grippy and chalky. Serve at 9 degrees with grilled fish, charcuterie, or a nicoise salad.
