Bondar Rosé 2023

Bondar Rosé is a layered, dry rosé of Grenache, Cinsault and a splash of Counoise.

Grenache takes 84 per cent, Cinsault 13 and Counoise the remaining three. Most of the Grenache grows on the sands of the Rayner home vineyard, with the balance from two Blewitt Springs growers whose deep-sand blocks date to 1975 and the mid-1990s; Cinsault and Counoise are both estate-grown. In the cellar the parcels are split by purpose — the grower Grenache, the Cinsault, Counoise and young-vine Rayner Grenache all ferment cool to hold primary character, while the older-vine Rayner Grenache ferments warm in old oak for weight and savoury depth. The two halves are then brought together.

Layers of flavour here, not one bright note: red fruit, a little spice, real grip, and a clean refreshing close that keeps the glass moving. Pour at 8 to 10 degrees. Works with barbecued quail, a bowl of mussels, or antipasti on a long afternoon.
