Bondar Rosé 2025

Bondar Rosé is a dry McLaren Vale rosé of Grenache with Cinsault and Mataro, from the estate's earliest harvest on record.

Picking began on 30 January, two to three weeks ahead of normal, after a dry, warm and settled growing season; a four-day February heatwave tested the team, but the sandy soils of the Rayner vineyard held the fruit well and harvest was done by late March. Grenache accounts for 90 per cent of the blend, mostly from 55-year-old estate vines with a younger block included, plus a little from an old sandy site in Blewitt Springs. Young-vine Grenache and Cinsault ferment cool for lift; older-vine Grenache and Mataro ferment warm in old oak for weight.

Pure and layered, with juicy red fruit, pithy chalk grip and a long watermelon close. Ten degrees, in a white wine glass, not a tumbler. Serve alongside grilled sardines, pork and fennel sausages, or a plate of jamón and melon.
