Bondar Violet Hour Shiraz 2021

Bondar Violet Hour Shiraz is a McLaren Vale Shiraz blended from across the estate's home vineyard.

The name comes from the colour of the sky the evening Andre Bondar and Selina Kelly brought in the last Shiraz for the first release. Eleven blocks in the Rayner vineyard contribute, and the wine is meant to capture the house signature — fragrance, juicy fruit, a light touch. Winemaking bends to the season: whole-bunch and destemmed fruit both feature, and time on skins varies block by block. This vintage saw only older oak, and it went to bottle unfiltered. The whole point is transparency, so nothing in the cellar is allowed to sit between the drinker and the site.

Ripe blue fruit, a floral hit, heady spice and liquorice lift, then a palate of inky depth, cracked pepper and charred meat carried on bright acidity. Serve at 16 to 17 degrees with grilled lamb cutlets, beef brisket, or roast beetroot and labneh.
