Caldora Colle dei Venti Pecorino is a fresh and aromatic white wine from Abruzzo, Italy. Made from 100% Pecorino grapes, it showcases notes of citrus, green apple, and white peach, with floral hints and a subtle mineral finish. The palate is crisp and lively, with well-balanced acidity and a refreshing finish.

Pecorino is a rare varietal, with limited plantings in Italy, and Caldora has dedicated itself to bringing out its full potential. With precise vineyard management and careful vinification, this Pecorino balances bright fruit with delicate oak, resulting in a wine of depth and finesse.

Recipe

Pollo Arrosto con Erbe (Herb-Roasted Chicken)

Ingredients:

  • 1 whole chicken (about 1.5kg)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme
  • 1 lemon, sliced
  • Salt and black pepper, to taste
  • 1/2 cup dry white wine (preferably Pecorino)

Instructions:

  1. Preheat the oven to 180°C.
  2. Rub the chicken inside and out with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Stuff the cavity with lemon slices and place extra slices under the skin.
  4. Place the chicken in a roasting pan and pour the white wine over it.
  5. Roast for approximately 1 hour and 20 minutes, basting occasionally with pan juices.
  6. Let rest for 10 minutes before carving and serving.

Tip: Serve with roasted vegetables or a fresh green salad for a balanced meal.
