Pollo Arrosto con Erbe (Herb-Roasted Chicken)
Ingredients:
- 1 whole chicken (about 1.5kg)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme
- 1 lemon, sliced
- Salt and black pepper, to taste
- 1/2 cup dry white wine (preferably Pecorino)
Instructions:
- Preheat the oven to 180°C.
- Rub the chicken inside and out with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Stuff the cavity with lemon slices and place extra slices under the skin.
- Place the chicken in a roasting pan and pour the white wine over it.
- Roast for approximately 1 hour and 20 minutes, basting occasionally with pan juices.
- Let rest for 10 minutes before carving and serving.
Tip: Serve with roasted vegetables or a fresh green salad for a balanced meal.
