Wild Mushroom Pasta
Ingredients:
- 300g fettuccine or tagliatelle
- 500g mixed wild mushrooms, sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1/2 cup white wine
- 1/4 cup Parmesan cheese, grated
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
- Cook pasta according to package instructions. Reserve 1/2 cup pasta water.
- In a pan, heat olive oil and sauté garlic until fragrant. Add mushrooms and cook until golden.
- Deglaze the pan with white wine and let it reduce. Stir in reserved pasta water.
- Toss pasta with the mushroom mixture and Parmesan cheese. Season with salt and pepper.
- Garnish with fresh parsley and serve warm.
