Ingredients:
- 4 chicken breasts (skinless, boneless)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1 cup Camille Giroud Bourgogne Blanc 2021 (or a similar Chardonnay)
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1 tsp fresh thyme leaves
- 1 tsp Dijon mustard
- Fresh parsley, chopped (for garnish)
Instructions:
- Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat and sear the chicken until golden on both sides, about 4–5 minutes per side. Remove the chicken and set aside.
- Lower the heat to medium and add the chopped shallot and garlic to the skillet. Sauté until softened, about 2 minutes.
- Deglaze the pan by pouring in the Chardonnay, scraping up any browned bits. Stir in the chicken stock, Dijon mustard, and thyme leaves. Allow the sauce to simmer for 3–4 minutes until slightly reduced.
- Pour in the heavy cream and continue to simmer until the sauce thickens, about 5 minutes. Adjust seasoning with salt and pepper.
- Return the chicken to the skillet and spoon the creamy sauce over it. Allow it to heat through for 2 minutes.
- Plate the chicken, drizzle with the sauce, and garnish with freshly chopped parsley. Serve immediately.
