Vegan Braised Portobello Mushrooms with Red Wine Reduction
Ingredients:
- 4 large portobello mushroom caps, stems removed
- 1 medium onion, thinly sliced
- 2 garlic cloves, minced
- 1 cup vegetable broth
- 1/2 cup red wine (a light Burgundy Pinot Noir works well)
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions:
- Preheat your oven to 180°C (350°F).
- In an ovenproof skillet, heat the olive oil over medium heat. Add the sliced onion and garlic, and sauté until softened, about 3 minutes.
- Add the portobello mushroom caps, season with salt and pepper, and sear for 3 minutes on each side until they begin to brown.
- Pour in the red wine, vegetable broth, and balsamic vinegar. Bring the mixture to a simmer, then cover the skillet and transfer it to the preheated oven.
- Braise the mushrooms for about 20 minutes until tender and infused with the red wine reduction.
- Remove from the oven, garnish with fresh thyme, and serve immediately.
