Vegan Braised Portobello Mushrooms with Red Wine Reduction

Ingredients:

  • 4 large portobello mushroom caps, stems removed
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 1/2 cup red wine (a light Burgundy Pinot Noir works well)
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In an ovenproof skillet, heat the olive oil over medium heat. Add the sliced onion and garlic, and sauté until softened, about 3 minutes.
  3. Add the portobello mushroom caps, season with salt and pepper, and sear for 3 minutes on each side until they begin to brown.
  4. Pour in the red wine, vegetable broth, and balsamic vinegar. Bring the mixture to a simmer, then cover the skillet and transfer it to the preheated oven.
  5. Braise the mushrooms for about 20 minutes until tender and infused with the red wine reduction.
  6. Remove from the oven, garnish with fresh thyme, and serve immediately.
