Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small eggplant, diced
  • 2 zucchinis, sliced into half-moons
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions:

  2. Meanwhile, in a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat, cover, and simmer for 15 minutes until the liquid is absorbed and the quinoa is fluffy. Fluff with a fork and stir in a drizzle of olive oil if desired.
  3. In a large bowl, combine the roasted vegetables with the cooked quinoa. Toss gently and adjust seasoning with salt and pepper.
