Recipe

Risotto al Tartufo (Truffle Risotto)

Ingredients:

  • 300g arborio rice
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 100mL dry white wine
  • 1L vegetable or chicken broth
  • 50g Parmigiano-Reggiano, grated
  • Fresh truffle or truffle oil
  • Salt and pepper, to taste

Instructions:

  1. In a saucepan, melt half the butter and sauté onion until soft.
  2. Add rice and stir to coat. Pour in wine and let it reduce.
  3. Gradually add broth, stirring until absorbed and rice is al dente.
  4. Stir in remaining butter, Parmigiano, and fresh truffle or a drizzle of truffle oil.
  5. Serve immediately with a glass of Cantina del Pino Barbaresco 2019.
